According to the website celiac.org “When people with celiac disease eat gluten (which is a protein found in wheat, rye, and barley), their body mounts an immune response that attacks and damages the small intestine, especially the villi. Villi are small fingerlike projections lining the small intestine that promote nutrient absorption. When villi get damaged, nutrients cannot be absorbed properly into the body.
Symptoms of Celiac include fatigue, muscle weakness, depression, memory loss, and severe chronic bowel problems.
Celiac disease runs in families. People with a first-degree relative who is a celiac (such as a parent, child, or sibling) have a 1 in 10 risk of developing the disease.
Celiac disease can develop at any age after people start consuming gluten. Left untreated, it can lead to additional serious health problems, including more autoimmune disorders.
People with celiac disease have a 2x greater risk of developing coronary artery disease, and a 4x greater risk of developing small bowel cancers.
